As the temperatures drop here in Kansas there is excitement in the air because it is officially “soup season”. Warm, comforting meals have their place as our bodies enter the darker, shorter days of fall and winter. Well-cooked meals are easier to digest and warming to the body and soul. I’ve rounded up some tasty fall recipes…a capsule menu if you will.
Recipes
Beef Pot Pie An easy one pot meal.
Fall Harvest Salad with Pumpkin Vinaigrette (add shredded chicken for a balanced meal)
Paleo Vanilla Pancakes serve with slices of fried ham
Soup
Italian Soup with Cauliflower We make this with cauliflower instead of the tortellini but both are delicious.
Creamy White Chicken Chili, serve with a side of roasted veg or coleslaw and cornbread
Broccoli Cheese Soup serve with crusty bread
Sheet Pan
Sheet Pan Steak Fajitas (serve with cheese over rice or on tortillas)
Casserole
Pepperoni Pizza Pasta (this can be done with veggie noodles)
Spaghetti Squash Lasagna (these are great in the squash OR layered with your favorite higher protein lasagna pasta or EggLife Thins)
Crock-Pot/Instant Pot
Slow Cooker Garlic Herb Whole Chicken with potatoes and carrots (left over chicken can be used in the Fall Harvest Salad)
Salsa Verde Shredded Beef Bowls with Cauliflower Rice
Apple Cider Pulled Pork with sheet pan veggies
Air Fryer
Air-Fryer Pork Tenderloin serve with pan roasted veggies and sweet potatoes.
